Why butter?
Butter costs more, browns faster, and is fussier to work with than shortening or margarine. It is also the fat that makes our cookies and scones taste the way they do, so it is what the scratch recipes are built on. A few bakes—the brownies, a bar or two—also use a little oil, and any candy or cookie mix-ins bring their own ingredients. It is all on the label.
